Easy Blueberry Cream Cheese Pie

List of Ingredients

Graham Cracker Crumb crust

  • 1 1/4 cup of crushed graham crackers
  • 4 to 5 teaspoons butter
  • 1/4 cup of sugar (I use Truvia Baking Sugar – 1/8 cup)

Mix graham cracker crumbs, butter and sugar until completely mixed, then press into bottom and sides of 9 inch pie plate

Cream Cheese Filling

  • 1 package low fat Cream Cheese (8oz)
  • 1 can Sweetened Condensed Milk
  • 1/3 cup Lemon Juice
  • 1 tsp Vanilla extract

Let Cream Cheese warm to room temperature, then blend until smooth.  Slowly add Sweetened condensed milk until mixed well with cream cheese.  Add 1/3 cup lemon juice and 1 teaspoon vanilla and beat until completely mixed.  Pour over graham cracker crust.

Blueberry Topping

I like to make my own homemade pie filling using fresh blueberries, but you can simply open a can of pie filling and spoon it over the top of your cream cheese filling.

To make your own, blend 1/2 cup of blueberries and strain out pulp.  Put juice into small sauce pan, add 2 tablespoons of cornstarch, 1/4 cup of sugar (or Truvia)  and 1/4 cup of water.  Heat until bubbly and thickened.  Add remaining blueberries (1/4 to 1/2 cup) and let cool.  Spoon over top of cream cheese.

 

Refrigerate pie for 1 to 2 hours before serving.blueberrypie

 

I like to make this dessert for my family using Truvia and fresh berries.  You could substitute the blueberries with raspberries, strawberries or just about any fruit you’d like.  My family loves it and it’s really easy to make.

Note:  I’ve only used sweetened condensed milk so far, but I have found a recipe that looks healthier and I do plan on trying it…. You can too
